Introduction

I found this recipe on the back of Pioneer Corn Meal pkg. You can add chopped jalapenos, half cup of cooked corn, etc. I use jalapeno olive oil instead of veg oil. It adds just enough zing! Ingredients

    1 cup yellow corn meal
    1/3 cup flour
    2 tsp baking powder
    1/2 tsp salt
    2/3 cup milk (1%)
    1 large egg
    3 TBSP veg oil or shortening (I used jalapeno olive oil)
    1-2 tsp sugar (optional-nutrition values includes 2 tsp)

Directions

Makes 9 2-inch pieces. Grease 8" or 9" baking dish. Preheat oven to 450 degrees. Combine all ingredients, pour into pan. Bake about 20 minutes.
