Salmon Packets

Ingredients

    4 oz salmon
    3 oz potatoes, chopped in bite size pieces
    1/2 c. carrots, chopped in bite size pieces
    1 shallot, sliced
    2 cloves garlic, peeled
    1 T. lemon juice
    1/2 oz. white wine
    1 T. olive oil
    salt and pepper to taste

Directions

Lay out sheet of foil. Lay vegetables in center and top with fish. Drizzle liquids over fish, add salt and pepper. Bake at 400 degrees for 30 minutes.
