Turkey & Spinach Lasagna

Ingredients

    1 lb ground xlean turkey breast
    2 cups 1% cottage cheese
    1 cup shredded part skim Mozzarella cheese
    1 egg
    2.5 cups spaghetti sauce
    10 oz chopped frozen spinach - thawed and drained
    1.5 tsp minced garlic
    1 tbsp dried parsley
    salt & pepper

Directions

Cook lasagna noodles according to package directions. Mix together cottage cheese, egg, 1/2 mozzarella cheese, parsley, salt and pepper (to taste). Brown the turkey breast with the chopped onions. When almost done, add the spinach, garlic and mushrooms. Salt & pepper to taste.

Spread spaghetti sauce on bottom of lasagna pan. Layer 3 noodles on this. Add 1/2 cottage cheese mixture then 1/2 turkey mixture. Top with 3 more noodles and repeat cheese and meat layers. Top with 3 more noodles, rest of spaghetti sauce and rest of mozzarella cheese. Bake 350 40 min. Till hot and bubbly. Let sit 5 min before cutting. Serves 9.
