6 Bean Organic Soup

Introduction

This is a soup mix that I received for Christmas. No Nutritional information, so I had to measure the beans and go from there. This is a soup mix that I received for Christmas. No Nutritional information, so I had to measure the beans and go from there.
Number of Servings: 5

Ingredients

    1 package 6 bean organic soup mix
    1 (28-oz) can diced tomatoes
    3 large carrots, diced
    6 cups water
    1 cup chicken broth

Directions

Place beans and water in crock of a crockpot. Soak overnight. Drain beans, reserving water. Put beans back into crock. Measure 6 cups of reserved soaking water and add 1 cup chicken broth. Heat on HIGH in microwave until boiling (about 12 minutes). Pour over beans and cook, covered, in crockpot for 2 hours on HIGH. In the meantime, dice carrots. After 2 hours, add carrots, tomatoes (undrained) and spice packet into crockpot; stir. Cover and cook 2 more hours on HIGH. If needed, the heat can then be reduced to LOW and cook until desired consistancy. Makes 8 servings.
