Baked Mac & Cheese

Ingredients

    13.5 ounces uncooked elbow macaroni
    1/2 cup butter or margarine
    1/3 cup all-purpose flour
    2 cups skim milk
    8 ounces low fat shredded cheddar cheese - divided use
    1 (12-ounce) container small-curd cottage cheese 1%
    2 egg whites, lightly beaten
    1/2 cup panko bread crumbs
    Italian seasoning - as needed

Directions

1. Cook pasta until al dente
2. Melt butter in a Dutch oven over low heat; whisk in flour until smooth. Cook 1 minute, whisking constantly.
3. Gradually whisk in milk; cook over medium heat, whisking constantly, until mixture is thickened and bubbly.
4. Stir in 2 cups Cheddar cheese and next 3 ingredients. Stir in pasta.
5. Spoon mixture into a lightly greased 13- x 9-inch baking dish.
6. Top with remaining 1 cup Cheddar cheese. Combine bread crumbs and Italian seasoning; sprinkle over cheese.
7. Bake at 350F (175C) for 25 minutes.
