Reduced Sodium Chili with Beef

Introduction

It never quite tastes the same each time I make it because I don't use exact measurements. This is a fairly spicy chili, so if you don't like heat I would cut out the red chile peppers. Number of Servings: 10

Ingredients

    2 lbs lean ground beef or sirloin
    2 med cans Brooks Chili Hot Beans
    1 can black beans (drained and rinsed)
    2 cans dark red kidney beans (drained and rinsed)
    2 cans diced tomatoes (no salt added)
    1 med-large Vidalia onion
    1 lg green pepper
    2-3 small red chile peppers
    Garlic Powder (add to taste)
    Chili Powder (add to taste)
    Mrs. Dash Extra Spicy

Directions

Brown ground beef until fully cooked
Dice green pepper and onion (saute to cut down on cooking time if desired)
Combine all ingredients
Simmer for 45-60 minutes (for sauteed veggies) or 60-90 mins for fresh

Makes 10 servings

Note: If you have time, use dried & soaked beans to replace the black and kidney beans. This will cut the sodium down 200-300mg. Also, using 3-4 fresh tomatoes in place of the canned will give a more mild taste.
