Creamy Pasta with Zucchini, Mushrooms, and Onions

Introduction

Nice comfort food, feels like you're eating something really bad for you but it's not! Nice comfort food, feels like you're eating something really bad for you but it's not!
Number of Servings: 6

Ingredients

    4 cups cooked whole wheat Angel Hair pasta
    2.5 cups sliced zucchini
    1.5 cups sliced mushrooms
    1/2 of a medium onion chopped
    1 tbs Extra Virgin Olive Oil
    3 tbs unsalted butter
    3 tbs white flour
    1.5 cups of skim milk
    1/2 cup low sodium chicken stock
    Salt, Pepper, and Garlic Powder to taste

Directions

Cook pasta according to package directions.
In a non stick skillet, sautee zucchini, onions, and mushrooms in EVOO on medium low heat until veggies just begin to soften. Remove from heat and set aside. Add butter and flour to pan. Whisk together until mixture becomes bubbly and then add milk and chicken stock; continue whisking until mixture begins to thinken and coats the back of a spoon. Add garlic powder, salt and pepper to taste. Toss pasta and veggies in sauce and serve immediatley.
Tip: Add some reserved pasta water to sauce if it needs to be thinned out a little.
Makes about 6-1 cup servings.
