Stella Juarez's Oatmeal Pancakes

Introduction

A friend of mine passed this heart healthy pancake recipe on to me. The pancakes themselves are kind of ugly (they look a little like turkey burgers when they are done, but they are really tasty and my kids and I all loved them. Just wish it didn't dirty so many dishes. :)

Number of Servings: 6

Ingredients

    1 c. skim milk (or water)
    3/4 c. oatmeal (uncooked, quick or regular oats)
    3/4 c. oatmeal flour
    1 tsp baking powder (optional)
    1/4 tsp salt (optional)
    4 large egg whites
    1/2 tsp cinnamon, ground

Directions

Heat milk (or water) on stove top until hot, stir in oats and set aside. Beat egg whites into a stiff foam with hand mixer or blender and reserve. Mix remaining dry ingredients together and stir in oatmeal/milk mixture. Fold in egg whites until mixture is well blended.
Spray pan with nonstick spray and cook pancakes until browned on both sides.

The original recipe says it makes ten. I have no idea how she pulled that off as I was only able to make six.
