White Bean and Spinach soup with chicken sausage

Introduction

The original recipe was with Kale, but I had spinach on hand so figured the calories making the soup with spinach. Also the chicken sausage I used was from WHOLE FOODS and it was CHICKEN SAUSAGE WITH CILANTRO. Ingredients

    64 oz chicken broth
    12 oz package chicken sausage
    1 large onion chopped
    7 C white beans (cannellini, navy, or great northern)
    1 bunch spinach or kale

Directions

Heat 1/4 C broth in a large pot over medium heat. Add sausage slices and cook until liquid has evaporated and sausage is just brown. Add onions and cook until softened about 10 minutes. Add broth to prevent onion from sticking.

Put 3 C beans and 2 C broth into a blender and puree until smooth; set aside. Add remaining broth to sausage mixture and bring to a boil. Add spinach/kale, reduce heat, and cover and simmer occasionally until wilted and softened about 5 minutes. Uncover and add remaining bean mixture. Add pepper to taste.
