* Fiber One Cereal, 1.75 cup crushed fine
* Plain Soymilk, 1 1/3 cup
* Flour, white, 1.1/2 cup
* Dried Tidbits Pineapple, 3/45 cup
* Brown Sugar, 1/2 cup, packed
* Shredded Carrot, 3/4 cup
* Cranberries, dried, sweetened (craisins), 1 cup
* *Sweetened flaked coconut, 1/4 cup
* Baking Powder, 3 tsp
* Cinnamon, ground, 2 tsp
* Salt, 1/4 tsp
* Egg, fresh, 2 large
* *Canola Oil, 1 tbsp
* Whole Ground Flaxseed Meal, 1/2
Directions
mix soy milk and crushed fiber one cereal, let stand 5 minutes, mix in remaining wet ingredients, then dry ingredients. put paper cups in regular muffin pans. spray bottom of papers. divide batter into 18 cupcake papers. bake 22-25 minutes. @ 375* makes 18 muffins 18 servings
