Chile Rellenos

Introduction

A favorite Mexican dish made with extra lean ham and low fat cheese. A favorite Mexican dish made with extra lean ham and low fat cheese.
Number of Servings: 6

Ingredients

    1 can Hatch Whole Poblano Peppers
    6 eggs (1 per pepper)
    1 1/2 cups diced extra lean ham (low sodium if you can find it)
    1 medium onion, diced
    3 cloves garlic, minced
    1/2 tsp ground cumin
    1/2 tsp ground oregano
    1 1/2 cups shredded low fat Monterey Jack or Colby cheese
    1 cup masa or regular flour if you don't have masa
    1/2 cup chopped cilantro
    1/2 cup low fat Monterey Jack or Colby cheese, shredded

Directions

Whisk egg whites in a medium bowl until thick and fluffy. Add the egg yolks and whisk until well mixed.

Brown the onions and garlic, then add the ham, cumin and oregano.

Stuff the chiles with the ham mixture and cheese (reserve 1/2 cup cheese for garnish), then close with toothpicks.

Skillet: Heat 1/4 inch canola oil in skillet til hot. Dip the chiles in the egg and then dredge in flour, put into skillet and brown on all sides. Place on a paper towel to wick away oil. Serve with brown rice and black beans (not included in recipe.)

Oven: Spray baking dish with cooking spray, then place filled chiles in baking dish. Pour egg mixture over chiles. Bake uncovered in a 350 degree oven for 25-30 minutes. Egg mixture should be golden brown and cheese should be bubbly.

Remove toothpicks, then garnish with cilantro and reserved cheese. Serve with brown rice and black beans (not included in calorie count).
