Introduction

This is super yummy and easy to make. Just combine everything in a stove top pot or slow cooker and let it go! I love this served with some home made bread (especially when its getting stale) This is super yummy and easy to make. Just combine everything in a stove top pot or slow cooker and let it go! I love this served with some home made bread (especially when its getting stale)
Number of Servings: 8

Ingredients

    1 med onion chopped finely
    4 celery stalks
    2-3 Carrots
    4 cloves garlic
    4 cups vegetable broth
    1 can crushed tomatos
    1 can beans in tomato sauce
    2 tsp italian seasoning
    fresh pepper to taste (about 1/8 tsp)
    1 tbsp basil
    1 cup water
    2 cups macaroni or pasta shells.

Directions

Dice the onion and chop up the veggies small. Add to pot or bottom of the slow cooker. Add all other ingredients except the pasta.

When the soup is almost done cook the pasta and then add to the mix. You could also cook the pasta in the soup but I like to cook it and give it a rinse before adding it so its not as starchy.

Cook on low heat until done. In the slow cooker on med this takes about 4 hours.
