Garbonzo Bean Pasta SaladSubmitted by: JOYCE825
2 - 15 oz cans Garbonzo beans
1/4 cup balsamic vinegar
1 can dice tomatoes (drained well)
1 medium red onion, diced
4 red bell peppers, diced
1/2 cup fresh basil, chopped
4 cloves garlic, minced
4 0z. fusilli pasta
Combine garbanzo beans, onions and vinegar in a bowl. Add the broiled tomatoe mixture and mix well.
Meanwhile, cook pasta, drain, add to above mixture and mix well. Chill at least 2 hours or overnight. Serve on bed on lettuce leaves.
Serves 5 - 2 cup portions for an entre. More if used for a side dish,
