Easy chicken in onion and garlic "sauce"

Introduction

Ingredients

    2 Chicken breast w/out skin
    1 regular white or yellow onion, medium, sliced thinly
    5 cloves garlic, sliced thinly
    1 packet sodium free chicken bouillon
    1 cup water (or more, as needed)

Directions

Preheat oven to 425 F.

On stove top, in an iron skillet or other oven-safe dish, spray with non-stick spray and add the onion and garlic. Push it around for a minute or two until it starts to soften (be careful not to burn the garlic!) then add the chicken breasts, the water and the bouillon.

Place the skillet in the oven and bake for 30-40 minutes or until done (check w/ instant read thermometer.) Keep an eye on it and add water if necessary to keep it from drying out completely - you want the onions to be moist, but not sloshy. Scoop out the chicken and top with some of the onion and garlic "sauce".

Serve with zucchini sauteed in cooking spray, with Italian seasonings sprinkled over.
