Mexican Chicken Filling

Introduction

An adaptation of a Rachel Ray recipe.

A great filling for any Mexican dish, such as tacos, enchiladas or burritos. Health numbers calculated with corn tortillas for enchiladas. Freezes great!

A great filling for any Mexican dish, such as tacos, enchiladas or burritos. Health numbers calculated with corn tortillas for enchiladas. Freezes great!

Number of Servings: 4

Ingredients

    2 full chicken breasts, cut into four pieces, skin and bone removed.
    1 tbsp lime juice
    1 small onions, in halves or quarters
    1 bay leaf
    3 cloves garlic
    2 tsp oregano or 2 stems of fresh oregano
    1 can fat-free, low-sodium chicken broth
    1 cup water
    2 tbsp tomato paste
    1/2 tsp ground cumin
    1/2 tsp chili powder

Directions

Makes 4 servings of 2 enchiladas each.

Rub the chicken breasts with lime to tenderize.
Place chicken in pan with onion, garlic, bay leaf, oregano, broth and water and bring to a boil.
Reduce hat to medium and simmer for 15 minutes.
Drain and transfer chicken and onions to a bowl; discard bay leaf.
Shred the chicken with 2 forks.
Add tomato paste, cumin, chili powder and salt to chicken. Slowly work this through the chicken until coated evenly.
