Oriental Orange Spinach

Introduction

Number of Servings: 6

Ingredients

    2 large bunches fresh spinach (about 3-4 cups)
    1/3 cup chicken broth
    1 Tbsp. low sodium soy sauce
    1/2 tsp. sugar
    2 oranges, peeled and cut into bite size pieces
    1 Tbsp. toasted sesame seeds

Directions

Remove the stems and wash the spinach. Place the spinach in a large sauce pot (with water to cover). Cook , covered, over medium-high heat for 4-5 min., stirring occasionally 'til leaves are just wilted; remove and drain well. In same sauce pot, combine chicken broth, soy sauce and sugar; bring to boil. Lower heat and stir in spinach and orange pieces and heat through (about 3 mins). Serve in individual bowls; sprinkle w/sesame seeds and serve with additional soy sauce if prefered. Pair with any asian entree and white or brown rice to complete meal.
