Ingredients

1 fresh egg
1 t. dried mustard
1 t. salt
Dash Pepper
1/4 cup olive oil
3 T. lemon juice
Dash cayenne Pepper
1 packet Splenda (optional)
3/4 to 1 cup light olive oil
Directions
Combine egg, mustard, salt, pepper, Splenda and 1/4 cup olive oil in blender or food processor. With blender running, add in a very slow stream, 1/2 cup olive oil. In a very, very slow stream, add remaining olive oil by drizzling oil into feeder of machine, processing until desired consistency. Store in a jar with a tight-fitting lid. Makes about 1-1/4 cups16 1 T. servings.
