Introduction

Let's face it, bright food is more appetising. The gorgeous colours and sweet flavours in this salad are very satisfying. Let's face it, bright food is more appetising. The gorgeous colours and sweet flavours in this salad are very satisfying.

Ingredients

    1 tomato, sliced
    2 inch cucumber, slicked
    1 medium carrot, grated
    4 baby corns, chopped
    1 pickled (vinegar) or fresh red pepper, sliced
    Salad Leaves, torn

    2T balsamic vinegar

Directions

Perpare all vegetables.
Arrange together and serve.
If packing for office lunch, layer so that 'wet' ingredients like tomatoes, pickled peppers and vinegar are at the bottom finishing with the salad leaves at the top.
