Ingredients

    4 large granny smith apples
1 tsp finely grated lemon peel
    2 tbsp splenda
    1/4 tsp nutmeg
    1/4 tsp cinnamon
    1/2 cup raisins
    8 sheets filo pastry dough
    Butter flavored cooking spray
    Cool Whip Free

Directions

Preheat oven 350F. Fill a large mixing bowl with water and a little lemon juice, set aside. Peel, core and dice apples placing them in the large mixing bowl as you cut them -- the water will make them juicier and the lemon will prevent them from browning while you prepare all of the apples.

Drain apples and in a large mixing bowl combine the apples, lemon peel, splenda, nutmeg and cinnamon until apples are well coated. Add raisins and toss.

Lay a sheet of filo pastry on a greased baking tray. Lightly spray pastry with butter spray. Place another sheet of pastry directly on top of first sheet and spray with butter spray. Repeat the process with remaining six sheets.

Lay apple mixture along length of sheet, leaving at least 2 inches from lengthwise edges. Fold the lengthwise edges over. Gently roll mixture up to resemble a Swiss roll. Spray edges and top of strudel with butter spray. Slash top diagonally with serated knife 3 or 4 times.

Bake in preheated oven 30 to 40 minutes, or until golden brown. Serve hot or cold with a 2 tbsp dollop of Cool Whip Free (aka Basterdized Cream).

  • I made this but deleted the sweetener all together and it was sweet as is. The apples and the raisins offered enough sweet as is! Will make again. - 5/9/10

  • Haha... I love the name! This sounds really nice. I don't usually go in for artificial sweeteners, but I bet using real sugar wouldn't bump up the calories too terribly much. I love pastry, so I think I will have to give this a shot! - 4/23/10
