Very dense muffin from Oxygen magazine.My revisions: upped amount of dates; 1/4 tsp each of ground cinnamon and nutmeg; removed egg; added applesauce; and changed portion size to MINI muffins.
Substitution: you could switch out the dates for raisins. Would also work with pecans or walnuts. Very dense muffin from Oxygen magazine.

Quaker Oats, 1 1/2 cup
Light Sllk Soymilk (plain), 1/4 cup
Pillsbury Whole Wheat Flour, 3/4 cup
Whole Foods Soy Protein Powder (vanilla), 1 serving
Flaxseed, 2 tbsp
Baking Powder, 2 tsp
Baking Soda, 1/2 tsp
Cinnamon, ground, 2 tsp
Nutmeg, ground 1/4 tsp
Cloves, ground 1/4 tsp
Dates, finely chopped, 1/2 cup
Country Creek Farms Egg Whites, 2
Grapeseed Oil, 1/4 c.
Agave Nectar (light), 2 tbsp
Applesauce, 2 Tbsp
Natures Goodness Prunes (baby food), 1/2 cup
Directions
Set oven to 400 degrees.
Optional: I like to chop the oats finer in my food processor before using. This makes for a less dense muffin.
Combine oatmeal and soy milk in a bowl, set aside and let soak. In a large bowl, mix flour, protein powder, flaxseed, baking powder, baking soda, cinnamon, cloves, nutmeg, and dates.
In third bowl, combine prunes, oil, Agave and applesauce; then mix into the Oatmeal/Milk mixture. Stir this into the flour mix.
Spoon into MINImuffin tray that has been sprayed with non stick oil spray. Bake for about 15-17 minutes.
