Turkey Sausage Soup

Introduction

Ingredients

    375 gm - Lilydale Turkey Sausage Links sliced 1/2' lengths
    5 - cups water
    3 - stalks celery sliced
    3 - large white potatoes 1/2'" cubed
    1 - small zucchini sliced
    1 - medium onion chopped
    1 - 28 oz. can chopped tomatoes
    1 - 15 0z. can kidney beans undrained
    3/4 c sliced manzanilla olives
    2 - cloves garlic minced
    1 - tsp aniseed
    1/2 - tsp black pepper

Directions

Makes 12 servings - 1 3/4 cups ea

Preparation:

1. Cook sausages over medium heat until browned and cooked, about 6 minutes, then drain them.

2. Stir in water, potatoes, celery, zucchini, onion, tomatoes with juice, beans, olives, garlic, aniseed and pepper. Bring to a boil. Reduce heat to low, cover and simmer until vegetables are tender; about 30 minutes
