Tabouli (Mediterranean Salad)

Introduction

I learned this recipe from a Lebanese woman I used to live with in college. It has more parsley than most tabouli recipes I have seen and thus, tastes much fresher. Number of Servings: 1

Ingredients

    1 C dry bulgur wheat
    2 C boiling water
    2-3 bunches parsley, chopped
    10-12 roma tomatoes, diced
    2 cucmbers, diced
    2 bell peppers, diced
    Fresh mint, chopped (optional)
    Lemon juice, to taste (I use 1/4 - 1/2 C)
    Extra virgin olive oil, to taste (approx 1/4 C)
    Salt, to taste

Directions

Soak bulgur in the water until the water is fully absorbed. Chop all vegetables and combine with bulgur. Add lemon juice, olive oil and salt and stir until fully mixed. Enjoy!
