Stuffed Bell Peppers

Ingredients

    .5 cup quorn mince
    .5 cup cooked couscous
    4 bell peppers
    .5 cup cannellini beans
    .25 cup red kidney beans
    1 clove garlic, minced
    .5 medium onion, diced
    .5 cup marinara sauce
    2 scallions, sliced
    salt
    pepper
    Aprox. 3 tbsp grated mozzarella cheese

Directions

Preheat oven to 350. Coat a small baking dish with cooking spray. Cut tops off peppers and clean them out; place them in the baking dish. Roast for 20 minutes.

Cook couscous according to directions and set aside.

Heat oil in a large skillet over medium-high heat. Add onion, garlic, salt and pepper; cook until softened, about 3 minutes.

Add quorn mince to skillet. Cook until browned. Add marinara sauce, scallions, and beans. Remove from heat, and stir in couscous.

Fill peppers with couscous mixture. Stuff mixture into par-roasted peppers. Top with grated cheese and bake for about 15 minutes or until cheese is completely melted. Serve hot.
