Vegetable rice

Ingredients

    Onions, raw, 1 tbsp chopped
    Green Peppers (bell peppers), 2 tbsp
    Carrots, raw, .25 cup, chopped
    Celery, raw, .25 cup, diced
    Mushrooms, fresh, .25 cup, pieces or slices
    Knorr Instant Stock mix chicken (1 tsp), 1 serving
    Kraft Minute Rice - White Rice, 1 serving
    Extra Light Olive Oil, .33 tbsp
    1 tsp of herbs such as thyme, marjoram, basil etc

Directions

Saute finely chopped vegetables in olive oil. Add 1/2 cup water and Knorr and rice. Bring to a simmer and cover and turn off. Let stand 10 minutes and serve.
Add variety of herbs or spices without adding calories for different flavours
