I found this recipe in a woman's magazine and it looked so good. I thought it would make a great lunch to take to work. They also have lots of fiber. Ingredients

4 Medium Sweet Red Peppers
1 can (15 oz.) Black Beans, rinsed and drained
4 oz Shredded Pepper Jack Cheese
3/4 c. Salsa
1 Small Onion (chopped)
1/2 c. Frozen Corn
1/3 c. Converted Long Grain Rice (uncooked)
1 tsp. Chili Powder
1 tsp. Ground Cumin
1/2 tsp. Garlic Powder
Directions
Cut tops off peppers and remove seeds: set aside. In a large bowl, combine the rest of the ingredients. Spoon into peppers. Place in slow cooker coated with cooking spray.
Cover and cook on low for 3-4 hours or until peppers are tender and filling is heated through. Serve with sour cream if desired.
