IntroductionA protein & fiber filled meal that will keep you full for hours! A protein & fiber filled meal that will keep you full for hours!
2 cups quinoa, cooked (about 1 cup uncooked)
2 cups lentils, cooked (about 1 cup uncooked)
2 tbsp olive oil
1/4 cup pine nuts
1 medium onion, chopped
1/4 cup lemon juice
1/4 cup fresh parsley
salt & pepper as needed
Saute onion and pine nuts until lightly browned.
When finished, mix quinoa, lentils & onions.
Add lemon juice, parsley and olive oil. Stir.
Serve hot & enjoy!
