Roasted Kale Chips

Introduction

Move over chips and popcorn! A healthy, salty, crunchy snack is moving in! Move over chips and popcorn! A healthy, salty, crunchy snack is moving in!
Number of Servings: 4

Ingredients

    1 bunch of Kale
    1 Tbsp. Olive oils
    Salt to taste

Directions

Pre-heat oven to 350.
Take parchment and cut to fit a baking sheet.
Clean and remove thick stem from kale. I just tear rather than using a knife. Get the salad spinner out or make sure the kale is quiet dry with paper towels.
Drizzle kale with oil and sprinkle with salt. Get your hands in the mix to evenly incorporate the oil and salt.
Lay them out on the baking sheet and Roast until slightly brown and clearly crunchy. Cool and enjoy!

I found that if I lowered the oven temp to 275 degrees, and let them stay in a little longer, they don't get burned as easily. I also made them with pizza seasoning and garlic salt -Too good to stop! - 4/10/11

An owner of a local healthy cafe makes them and told me this exact recipe. I can't believe how good this. And after reading about the jalapeno infused Olive Oil, I have a few thoughts about a lot more infusing. I also added a slight dusting of parmesan/romano cheese over the kale. Thanks - 11/5/11

  • Very disappointed. Used washed, bagged Kale. Dried it & mixed w/oil & salt. Baked @ 275 as one review suggested. Recipe didn't say how long to bake. I started w/20 min, +15, +15 more but most were still soggy and didn't crisp up even after 50 min. Liked the flavor, but didn't get the "chip" result. - 7/3/14

  • Is the oil just for making the salt stick to the kale, or is there another reason for it, such as burn-reduction?

Could I spray each piece with 'I Can't Believe It's Not Butter' Spray to add seasonings for the same result, minus the extra calories from the oil? - 4/6/14

  • These tasted great. I'm not sure if they turned out like they were supposed to. I checked them after 9 minutes. They were totally flat and stuck to the baking sheet. They came off easily with a metal spatula. They were paper thin and very crackly. Again--they tasted great! - 10/16/13

  • These are also great as a low sodium snack. Substitute a Cajun Creole spice (no salt) for the salt and distribute in the same way as above. I find baking at a lower temperature of 250 degrees for about 40 minutes results in a very crisp and crunchy chip with no over browning. They are great! - 1/31/13

  • i tried these with a 'special ingredient'--Kroger's market in michigan has an olive oil that is called 'zesty italian;'--through the clear bottle you can see the herbs that are infusing the oil--one of these is a red pepper--when i used this the chips had a little zing-but not too too hot-just right - 11/6/12
