Micro-Smashed Potatoes

Introduction

I got this from my Light & Delish magazine...I made mine lighter by using Smart Balance butter spread. The recipe called for chives but I used garlic powder and parley flakes to taste. Ingredients

    Ingredients:
    *3 lbs Yukon Gold Potatoes (1 potatoe about 5oz), 48 oz (remove
    Smart Balance, Smart Balance Omega Plus Buttery Spread, 1 Tbsp, 2 serving (remove)
    *Iodized Sea Salt, 0.75 tsp (remove)
    Pepper, black, 0.25 tsp (remove)
    *12 oz Great Value Fat Free Plain nonfat Yogurt, 1.333 cup (remove)
    Garlic Powder
    Parsley Flakes


Directions

1.Place unpeeled potatoes (do not pierce) in very large microwave-safe bowl. Cover with vented plastic wrap. Microwave on High 15 to 16 minutes or until fork-tender. Uncover (leaving any accumulated liquid in bowl); add margarine, salt, and ground black pepper. With potato masher, coarsely mash potatoes.
2.Stir in yogurt and garlic powder & parsley flakes to taste. Spoon into serving bowl; cover with plastic wrap to keep warm. If necessary, reheat in microwave just before serving. Makes 8 - 1 cup servings.
