Protein Waffles

Ingredients

    6 eggs (or 1 1/4 cup--can use just whites)
    1 cup packed cottage cheese (dry curd, or whatever you have on hand)
    1 - 1 1/4 cup old-fashioned oats--NOT instant or quick-cooking
    1/2 tsp. salt
    1 rounded tsp. baking powder
    1/4 c. splenda (optional, to taste)
    vanilla flavoring (to taste)

Directions

Blend ingredients in blender for 1-2 minutes. Pour into waffle iron and cook according to your waffle maker's directions.
