Roasted Walnut and Pear Salad

Roasted Walnut and Pear Salad

Introduction

This is absolutely fabulous! This is absolutely fabulous!
Number of Servings: 8

Ingredients

    1 head romaine lettuce, torn
    2 cups pears, thinly sliced
    2 Roma tomatos, chopped (optional)
    1 cup walnuts
    2 tablespoons margarine
    1/4 cup brown sugar, packed
    1 (4-ounce) package crumbled blue cheese
    1 (8-ounce) bottle light raspberry vinaigrette

Directions

Place lettuce in a large serving bowl; lay pears on top and add tomatoes. In a medium skillet, roast walnuts in butter until golden; add brown sugar and stir over low heat until walnuts are hardened with glaze. Add walnuts to salads, sprinkle on blue cheese and toss with vinegar dressing.

    This was fantastic. I changed out the blue cheese for gorgonzola to make it a little more mild and used an Asian Sesame Vinagrette. - 6/29/09

    I highly recommend this salad! I substituted red gala apples and gorgonzola cheese. After all the ingredients were tossed together, it was incredibly flavorful. The apples really added to the colorful look of the salad. I had a fun time candying the walnuts and they added the perfect sweetness. - 5/16/11

    very good! I didn't use enough romaine. I really didn't know if I would like tomatoes and pairs together. I was good.
