1 can Black Beans (15 oz)
1 can Whole Kernel Corn (15 oz)
4 cups Salsa (May substitute RoTel)
1 cup Instant Brown Rice (uncooked)
1 ea. Medium Onion (diced)
2 tsp. Cumin
2 Tbsp. Lime Juice
Approximately 6 servings
Can be served with a dollop of sour cream and even wrapped in a tortilla.
