Spiced Squash

Ingredients

1 1/2 pounds butternut squash, peeled, seeded and cut into 1-inch cubes
2 garlic cloves, crushed
1 tbsp olive oil
1 tbsp cajun spice
1/2 chopped fresh cilantro
salt
pepper
1 or 2 long red chillies, seeded and finely chopped
Directions
In a heavy skillet, heat oil over medium heat. Add chilies, garlic, squash, salt and pepper, stirring so they are well-coated. Add 1/2 cup chicken broth, and cook, covered, for 10-15 minutes or until squash is tender. Stir in cilantro and serve.
