Introduction

A remake of a wonderful recipe from allrecipes.com. Oil was reduced and sugar replaced with Splenda blend. Be sure to use natural no-sugar added peanut butter. Ingredients

    3 Tblsp rice wine vinegar
    1 Tblsp canola oil
    2.5 Tblsp no-sugar peanut butter
    1.5 Tblsp soy sauce
    1.5 Tblsp Splenda brown sugar blend
    1 Tblsp minced fresh ginger
    1 Tblsp minced garlic
    2.5 cups shredded green cabbage
    1 cup shredded red cabbage
    1 carrot, shredded
    4 green onion, thinly sliced
    1/4 c. chopped fresh cilantro

Directions

In a medium bowl, whisk together the rice vinegar, oil, peanut butter, soy sauce, brown sugar blend, ginger and garlic.

In a large bowl, mix the green cabbage, red cabbage, carrots, green onions, and cilantro. Toss with the dressing just before serving.
