Rice Crisped Chicken w/Garlic Dressing

Introduction

Number of Servings: 4

Ingredients

    1 lb. - Boneless, Skinless Chicken Thighs
    1 tsp. - Olive Oil
    Salt / Pepper to taste

    Dressing:

    1 cup - Sour Cream ( I use Penn Maid Light for fewer
    calories)
    1 tsp.- Oregano
    1/4 tsp. Ground Black Pepper
    1 Tblsp. Lemon Juice
    1 tsp. Minced Garlic
    2 Cups - Crushed Rice Crispies
    Paparika to taste
    2 Tblsp. Fat Free Milk

Directions

Preheat oven to 350 degrees. Lightly coat the chicken with olive oil and season with salt and pepper.

Mix together the sour cream, oregano salt. pepper, lemon juice and garlic. Reserve 1/2 cup of this blend for the dressing. Use the remaining blend in the chicken preperation. Do not mix the two together. Coat the chicken in the sour cream blend, and then carefully dip in the rice crispies to coat.

Spray a baking pan with nonstick cooking spray and set the chicken on top. Lightly spray the top of the chicken with nonstick cooking spray. Sprinkle with paprika.

Bake approximately 25 minutes or until the chicken is cooked all the way through. Whisk 2 Tablespoons of milk into the reserve sour cream blend to make the garlic dressing. Serve Chicken with a dollop of dressing.
