Calico Beef Chili

Introduction

This is my basic chili recipe. I add whatever veggies I have around for added nutrition. The tomatoes and tomato juice I use are reduced sodium varieties. This is my basic chili recipe. I add whatever veggies I have around for added nutrition. The tomatoes and tomato juice I use are reduced sodium varieties.
Number of Servings: 8

Ingredients

    1 lb extra lean ground beef
    1 medium onion, chopped
    2 medium stalks celery, cleaned and sliced
    1 medium carrot, peeled and chopped
    2 cups cooked red kidney beans
    1 large can diced tomatoes, approx 2 cups
    1 1/2 cups tomato juice
    3 T chili powder, or to taste
    1 T cumin
    2 tsp Tabasco sauce, or hot sauce of your choice

Directions

Chop vegetables and saute in large saucepan over medium heat, using 1 T of the canola oil. When softened, remove from pan and set aside. Add remaining oil to same pan and add ground beef. When browned, add vegetables back to pot. Sprinkle spices over and mix well. Stir in tomatoes and juice. Taste and adjust seasonings if required. Lower heat, cover and simmer for 45 minutes to allow flavours to blend.
Makes approximately 8 - 1 cup servings
