Light and Delicious Taco Salad

Introduction

This is a yummy, sweet, taco salad, which can be tweaked and changed to fit the flavors you love! This is a yummy, sweet, taco salad, which can be tweaked and changed to fit the flavors you love!
Number of Servings: 4

Ingredients

    1/2 cup of onions (1 small onion, more if you like it!)
    1 packet of less sodium taco seasoning
    1 cup of cheese (2% cheddar or taco mix)
    90/10 lean ground beef
    Taco shells (or, tortillas, can broken up too, or you can even used baked!)
    1/2 bag of your favorite salad greens (I use spring mix and spinach)
    Light Catalina dressing
    A large bowl
    A Large Skillet

Directions

1.preheat your oven to cook your taco shells if you are not using torilla chips. (don't forget to put them in the oven, or get them out!)
2.Start browning your ground beef in a skillet
3.While your beef is browning chop up your onions.
4.Push the meat to one side in your skillet and cook the onions on the other side until they are translucent.
5.Add your taco seasoning and water as package directs and mix meat and seasoning. Cook until the water has evaporated.
6. Move your pan of to the side for your meat to cool a bit and get ready to prepare your greens.
7.Chop up your greens into small strips or pieces. I like to roll them into a scrunchy ball and cut them into strips as best as possible. Add your greens to the bowl.
8.Add 1 cup of 2% cheddar(or taco mix) cheese to the bowl
Next add your meat and onion mixture, 1/3 of the bottle of Catalina dressing.
9. Mix everything together and serve in taco shells, or crunch of tortillas and serve them on top or mixed in. (mixed in can make them soggy)

Makes 4 servings of two shells each filled w/ the mixture.
