Number of Servings: 2

Ingredients

    1 medium green capsicum, chopped finely
    2 medium tomatoes, seeded, chopped finely
    4 spring onions, chopped finely
    2 large anchovy fillets, drained, chopped finely
    10 seeded green olvies, chopped finely
    2 red Thai chillies, seeded, chopped finely
    2 tswp finely chopped fresh mint leaves
    2 x 185g can tuna, drained, flaked
    1 Tbsp baby capers, drained
    2 Tbsp olive oil
    1 clove garlic, crushed
    1 tsp coriander seeds
    1 tsp caraway seeds
    1 Tbsp lemon juice
    2 Tbsp red wine vinegar

Directions

Combine the first nine ingredients in a bowl and toss to combine.

Heat the oil in a small pan, add garlic and seeds, cook, sgtirring, until fragant and just popping. Stir in the juic e and vinegar.

Dress the salad.
