Easy Spring Risotto

Introduction

Thanks to Heather's Dish for this delicious and easy risotto recipe. Heather made hers with asparagus and peas...I made mine with green beans and carrots...switch it up to whatever you have on hand, it will still be delicious! Number of Servings: 6

Ingredients

    4 cups brown rice (cooked)
    1 cup chopped green beans
    1 medium carrot, chopped
    1 medium onion, chopped
    1 tbsp olive oil
    3 cloves garlic, minced
    2 tbsp flour
    3 cups chicken or veggie broth
    1 cup parmesan cheese
    2 tbsp feta cheese
    1 tbsp thyme or mixed herbs
    salt & pepper to taste

Directions

In a skillet over medium heat saute your veggies in oil or butter until translucent. Add garlic and saute another 1-2 minutes, stirring frequently to make sure it doesn’t burn. Meanwhile, whisk together the flour and stock. Add to pan and bring to a simmer, stirring frequently. Add thyme. When the liquid starts to thicken, add the cooked brown rice. Stir together until the sauce can coat the back of a spoon. Take off heat and stir in cheeses, salt, and pepper. Serve immediately!
