Introduction

Ingredients

    125 grams of lasagna noodles
    5 Medium Tomatoes
    500 grams of lean ground beef
    2 medium yellow bell peppers, chopped
    1 Red onion, chopped
    1 clove garlic
    1 TBSP pureed tomatoes
    1 TBSP olive oil
    Spices to taste
    2 oz shredded parm.
    250 grams of whole milk yogurt (you can use lowfat instead)
    Almost half a cup of 2% milk (you can use lowfat or skim)
    2 oz Italian-ish cheese (we don't know what ours would be called, but it's a strong cheese)

Directions

Soak the tomatoes in hot water after slitting skin in quarters to let water penetrate. After soaking for a few minutes, peel skin off tomatoes and cut tomatoes into small chunks. Place tomato chunks, ground beef, peppers, onions, pureed tomato and olive oil in a pan to cook until tomatoes are soft. Layer lasagna noodles and tomato mixture and Parmesan cheese in glass dish. Place extra cheese, yogurt and italian cheese on top of dish. Cook at a medium-high heat until top browns.
