Rebecca's Mediterranean Couscous

Introduction

You may want to add more oil if you want. Also, this may taste good with Parmesean Cheese, but then it wouldn't be vegan. You may want to add more oil if you want. Also, this may taste good with Parmesean Cheese, but then it wouldn't be vegan.
Number of Servings: 4

Ingredients

    1 cup DRY Couscous
    1 cup water
    .5 T Olive Oil
    1 (or fewer) Basil leaves
    2 T Pine Nut (pinenuts)


Directions

1. In a pan, put water, olive oil, basil, and pine nuts. Bring to a boil.
2. Stir in couscous. COVER AND REMOVE FROM HEAT.
3. Wait 5 minutes.
4. Fluff couscous with fork.

1 serving is about .5 cup. I put this as a side dish, but I eat it as a main dish.
