Shrimp K-Bobs

Ingredients

    16 large shrimp, cleaned, peeled and deveined
    2 large bell peppers, cut into approximately 1-inch squares
    4 small onions, peeled and quartered
    16 large whole, fresh mushrooms
    olive oil for brushing
    pepper to taste

Directions

On 4 or 5 wooden or metal skewers, arrange shrimp, bell pepper, onion and mushroom in repeating pattern until skewer is full. Brush all with olive oil. Sprinkle with pepper. Grill over medium to red-hot coals for 4 minutes a side or until done. Makes 4 or 5 servings.
