Coconut Crusted Mahi Mahi

Introduction

Found this recipe on Spark but tweaked it a little for personal preference. Also, you don't use all the flour, egg and coconut so I accounted for that in the nutritional ingredient list. Found this recipe on Spark but tweaked it a little for personal preference. Also, you don't use all the flour, egg and coconut so I accounted for that in the nutritional ingredient list.
Number of Servings: 2

Ingredients

    280 g pk frozen mahi mahi fillets, thawed
    1/2 cup shredded coconut, sweetened
    1 egg, lightly beaten
    1/4 cup whole wheat flour
    Salt
    Pepper
    Cayenne Pepper

Directions

Preheat oven to 375 degrees F.
Cut fish into 2 pieces if needed.
Mix flour, salt, pepper and cayenne. Place on a plate for dredging fish.
Lightly beat egg in a bowl.
Place coconut on another plate for dipping.
Dredge fish in flour mixture first, then dip in egg and then coconut. May need to press coconut into fish to help stick.
Place on a rack on a baking sheet and cook until fish flakes easily, about 15-18 minutes.
Serves 2.
