Introduction

Number of Servings: 4

Ingredients

    3 eggs
    2 egg whites
    Chopped red pepper
    Diced tomatoes (can use canned-drain them well)
    Chopped onion
    1/2 cup drained artichoke hearts
    salt and pepper to taste
    1/2 cup fat free feta cheese
    1/2 cup 2% shredded cheese

Directions

Saute chopped onion, peppers, tomatoes and artichoke hearts until tender.

Whisk together eggs and egg whites, season with garlic salt and pepper.

add eggs to sauted veggies. Reduce heat to medium and allow to cook until set on the bottom.

Top with feta and shredded cheese.

Put in 350 degree oven to cook top and brown cheese
