White bean, sausage, spinach stew

Introduction

Ingredients

    2 cans northern white beans, drained and rinsed
    8 c. low salt chicken broth
    1 lg. bay leaf
    1/2 tsp dried thyme
    2 T olive oil
    1 1/2 c. chopped onion
    1 c. chopped onion
    2 large carrots, sliced into 1/2 inch rounds
    1 10 oz. package spinach
    4 low fat mild Italian sausages
    2 cloves garlic, chopped
    1/3 c. red wine

Directions

Drain and rinse the beans; put them in a soup pot with the chicken broth, bay leaf and thyme. Begin warming on medium heat, meanwhile, heat olive oil and saute onions, celery and carrots. Stir often, until they are soft but not brown. Place sausages in a skillet with half and inch of water until water evaporates and sausages are browned. Add crushed garlic and wine, cover and cook 5 minutes more. Remove sausages and cut into 1 inch pieces. Add sausage, pan juices and vegetables to beans, tear spinach into bite size pieces and add as well. Cook 5 minutes more. Sprinkle with grated parmesan when serving.
