Mini Biscuit Pizzas

Introduction

These make a great quick dinner or an easy appetizer. Top with whatever toppings you prefer and add the toppings separately in your tracker. You could also reduce fat and calories by using ff cheese, but my family doesn't care for the way it melts or tastes. These make a great quick dinner or an easy appetizer. Ingredients

    1 sleeve Pillsbury Country Style Biscuit Dough
    1/2 cup spaghetti sauce (I used my own homemade)
    1/4 cup Kraft Five Cheese Shredded Cheese
    Your favorite pizza toppings - pepperoni, raw veggies, etc.

Directions

Open sleeve of biscuits and pull out one at a time. Using a rolling pin or other rolling utensil (I used a Pampered Chef double sided roller), flatten biscuits to about 1/4" thick, leaving them slightly thicker on edges. Place on greased cookie sheet. Since each tube holds 10 biscuits, I split one biscuit up among the remaining nine biscuits. Calorie count remains the same since I say the recipe makes 9 servings.

Top biscuits with tomato sauce, dividing the half cup among all 12 biscuits. Top with cheese, also dividing 1/4 cup among all 12 biscuits.

Because they may cook too fast, I put the toppings on the sauce and then put on the cheese, but that is a personal preference. I used pineapple the first time, but will try others next time. Cut the toppings into VERY small pieces to make them easier to place on the pizzas. The calories and fat would also be lower if you used a meatless sauce.

Three mini pizzas equal one serving.
