Bashed Neeps with Carrots and Onion Gravy

Introduction

Number of Servings: 6

Ingredients

    1 lb turnip roots (about 3 medium, pealed and chopped
    1/2 lb carrots (3-4). pealed and sliced
    1/2 lb onion, chopped
    2 tbs sour cream
    2 oz margarine or butter
    1 tsp brown sugar
    1 oz flour
    12 oz beef or chicken stock
    dash Worchestershire sauce
    seasonings to taste

Directions

Neeps and carrots
Boil turnips and carrots together in enough water to cover until tender (about 10-15 minutes). Drain water and add sour cream. Mash as you would potatoes. Season as desired. (Garlic, curry, and cardomon work well).

Onion gravy
Saute onions and brown sugar in margarine until deep brown. Sprinkle in flour and pour in stock, stiring constantly. Bring to a boil and add dash of Worchestershire.

The Scots typically serve this by putting a serving of the neeps in the center of the plate, topping that with the meat course (beef, pork, lamb, sausage, poultry) and then spooning the gravy over it.
