Tortellini with Chicken and Broccoli

Ingredients

    1.5 lbs diced chicken breast
    700 gr pkg Oliveri cheese tortellini
    2 cups low fat cottage cheese
    1/2 cup light sour cream
    1/2 cup grated parmesan cheese
    1 tsp nutmeg
    1 tsp thyme
    1/2 tsp salt
    1/2 tsp black pepper
    6 cups broccoli florets
    1 large red bell pepper
    9 diced garlic cloves
    butter and olive oil if needed to saute chicken

Directions

If using already cooked chicken, dice into pieces. Otherwishe cut chicken tenders or breasts into fork size pieces and sprinkle with garlic powder, salt and pepper. Dust with flour and saute in butter and olive oil combination til golden brown. Set aside. Slowly saute garlic til tender and mild. Add chopped bell pepper and cook just til tender.
Add to pepper and garlic to chicken. Set aside.

In a food processor mix til smooth the cottage cheese, sour cream, half of the parmesan cheese, nutmeg and thyme. You can do this ahead of time, and just let it come to room temperature.

Bring pot of water to boil to cook tortellini. Let simmer til ready to cook. 10 minutes before you want to eat, steam the broccoli florets, and cook the pasta. Heat the chicken and peppers, and stir in the broccoli and pasta. Pour sauce over, and top with remaining parmesan. Serve immediately.
