Apple Cinnamon Muffins

Introduction

Number of Servings: 18

Ingredients

    1 1/4 c. oat bran cereal, uncooked
    1 c. whoel wheat flour
    2 tsp. ground cinnamon
    1 tsp. baking powder
    3/4 tsp baking soda
    1/2 tsp salt
    3/4 c. unsweetened applesauce
    1 apple, peeled, cored, diced
    1 c. Splenda
    1/2 c. vegetable oil
    1 egg
    1 tsp. vanilla

Directions

Preheat oven to 375. Coat muffin tins with spray, paper or silicone cups. Combine dry ingredients. In separate bowl, combine wet ingredients and stir into dry, mixing only until everything is moistened. Bake 15-20 minutes. Makes at least 12 regular sized muffins (made 18 for me).
