Cinnamon Spiced Banana Bread

Ingredients

    1 c. All-purpose flour
    1 c. Whole Wheat Flour
    1/2 c. Slenda Brown Sugar Blend or 1 c. regular B. sugar
    1 T Baking Powder
    1 tsp. Ground Cinnamon
    1/4 tsp Baking Soda
    4 Egg Whites or 1/2 c. Egg Beaters
    1/2 c. Lowfat buttermilk
    1/3 c. Unsweetened Applesauce
    1 tsp Vanilla
    1 c. Mashed Ripe Bananas (about 2 Med.)
    1/2 c. Chopped Walnuts

Directions

Preheat the oven to 350. Spray a 9" X 5" X 3" loaf pan with no-stick spray and set aside. Ini a large bowl, stir together the all-purpose flour, whole wheat flour, brown sugar, baking powder, cinnamon and baking soda. Make a well in the center of the mixture. In another bowl, beat the egg whites until foamy. Stir in the buttermilk, applesauce, and vanilla. Stir in the bananas until well blended. Add the banana mixture to the flour mixture and stir just until moistened. Fold in the Walnuts. Pour the batter into the prepared pan. Bake for 45 to 55 minutes or until a toothpick inserted in the center comes out clean. Cool the bread in the pan for 10 minutes. Then remove the bread and cool completely on a wire rack before slicing.
