Introduction

Great to have on hand to have fresh muffins in the morning. Mix can keep in fridge for up to three weeks! Even better only 1 weight watcher point each! Number of Servings: 36

Ingredients

    Mix #1
    1 cup sugar
    2 eggs
    1/2 cup molasses
    1 cup unsweetened applesauce
    Mix #2
    1 cup otas
    1 cup hot water
    2 cups bran
    Mix #3
    3 cups whole wheat flour
    2 tsp cinnamon
    1/2 tsp nutmeg
    1/2 tsp salt
    2 cups milk (add slowly)
    2 1/2 tsp baking powder
    1 cup raisins (optional)
    1 chopped apple (optional)

Directions

Combine ingredients for mix #1 in large bowl then separately combine ingredients for mix #2. Add mix #2 to mix #1 and then add the rest of the ingredients in mix #3 to the bowl. Mix all ingredients until blended. Add fruit if desired. Bake at 350 for 12 mins or until toothpick comes out clean. Makes 3 dozen muffins.

Keeps covered in fridge for 3 weeks.
